Tonight, Derick came over to enjoy Fraiser Fridays. We were hungry, and decided it was a perfect day to make my mom’s famous bacon and potato soup. This tasty soup is very rich and wonderful, especially on a cold fall day like today.
While the bacon began to sizzle, Derick started chopping some green onions.
Even though no video was recorded, he turned around and said to me “When I’m cooking, I like to add commentary to everything I do like I have an audience.”
The first thought that came to mind was “If only Hannah were here to record this. She loves to make videos, loves to cook, and loves when people participate in the videos she makes.” Even though we didn’t make a video of our cooking endeavors, you were in our thoughts! Here’s to you, Hannah. :]
Below is our family recipe for Hearty Bacon and Potato Soup.
(This is a single batch, but we made a triple batch.)
Try it out!
8 slices of bacon, cut into 1” pieces
6 medium cubed 1/2” new red potatoes
1 cup chopped onions
1 cup dairy cour cream
1 1/4 cup milk
10 3/4 oz. can condensed cream of chicken soup
8 oz. can whole kernel corn (we used corn with pepper pieces in it)
1/4 tsp. pepper
1/4 tsp. thyme leaves
In 3qt saucepan cook bacon over medium heat for 5 minutes; add potatoes and onions into pan. Continue cooking, stirring occasionally, until potatoes are tender. Add remaining ingredients. Continue cooking, stirring occasionally, until headed through.
(if you multiple the recipe, remember to use a bigger pan! :] )
